Pasture Reserve is a private whole-beef locker for New York City: one grass-fed, grass-finished animal, raised without antibiotics and dedicated to your locker, kept in temperature-monitored commercial frozen storage, counted package by package, and delivered every month.

What “whole cow” means here

One animal dedicated to one locker.

“Whole cow” is how people tend to search for this. To be clear: you don’t buy or own a live animal. We source and butcher one whole animal and dedicate all of its beef to your locker. Final cuts, package counts, and weights vary by animal, butcher, cut sheet, trim, aging, and inspection.

The honest inventory

A wide range of cuts, with the steaks spread across the year.

A locker may include ground beef, rib and loin steaks, sirloin, flat iron, skirt, flank, hanger, tri-tip, picanha, roasts, brisket, short ribs, shank, stew meat, marrow and soup bones, and specialty items when the processor can return them.

Premium cuts are limited. The Concierge Desk spreads them carefully across twelve deliveries and builds the rest of the animal around how your household actually cooks. A private chef or household manager can run the same locker directly.

The founding locker is planned around about 400 pounds of beef for the year. Most boxes aim for 30–36 lb, though any one box may be lighter or heavier so the year evens out against what your animal actually yielded. Returned parts are limited and listed on their own.

Source

Grass-fed, grass-finished, pasture-raised, and raised without antibiotics are required. Never feedlot-finished. Dry-aged fourteen days before butchering.

We only work with processing done under a USDA grant of inspection.

Every finished package goes into temperature-monitored commercial frozen storage under one locker number.

Deliver

Twelve NYC deliveries begin within the founding delivery window, once sourcing and butchering are done.
