A whole-animal beef locker built to be operated by you.

Give one New York City household the integrity of a whole animal without taking in about 400 pounds of beef at the residence. Pasture Reserve handles the temperature-monitored commercial frozen storage, counts and logs every package, and delivers each month. You decide how the beef enters the kitchen.

The operating model

The locker works like a private pantry with an exact running count.

Final cuts, package counts, and weights vary by animal and processor. We write that variation down rather than hide it.

The principal holds the locker

The household applies, sets the cut sheet and first delivery, gets approval and written terms, then pays for the year. A chef or household manager can be named to run it.

You build from a real balance

The locker shows the finished packages from that household's animal. Whatever you send out is deducted; whatever's left stays in temperature-monitored commercial frozen storage.

Premium cuts are paced

Ribeye, strip, tenderloin, and other premium cuts are limited. The locker lets you plan them across the year instead of burning through them in the first few menus.

The city logistics are handled

A monthly box usually aims for 30–36 lb. You can request up to two extra deliveries in a month with five days' notice, as long as the locker has the balance.

What may be in the reserve

The full cooking range of one animal, accounted for honestly.

Quick and familiar

Ground beef, stew meat, sirloin, flat iron, flank, skirt, and other versatile packages, depending on the final cut sheet.

Slow and deliberate

Chuck and round roasts, brisket, short ribs, shank, soup bones, marrow bones, and braising cuts.

Finite and paced

Ribeye, strip, tenderloin, porterhouse or T-bone configurations, and specialty cuts determined by the animal and butcher.

Soup bones, marrow bones, liver, heart, kidneys, oxtail, and tongue are included only when you ask for them, and only when they’re available and returned by the processor. Raw suet may carry an added charge. No page or preview can promise a specific final list of cuts.

For a principal

The financial conversation remains with the household.

The founding locker is $9,999 for the year. Nothing is charged when you apply. The principal is approved and gets the reservation terms in writing before any bank transfer or wire instructions go out. The payment stays fully refundable until we secure an animal for the household’s locker.
